Easy dinner, Thai red curry!
Fast, easy, and delicious! This Thai red curry is so fast, full of veggies and protein, everything you want in a dinner! Trader Joe’s sauce packs so much flavor it needs nothing more, your just adding the meat and veggies. When you get the craving for Thai, save some money and try making this at home!
Only things you need!
Just a bottle of Thai red curry and a box of frozen jasmine rice! Besides this it’s just vegetables and protein of your choice 🙂 I’m a huge fan of mushrooms so those had to go in, onion is a staple, and carrots/celery just go so well with curry. Shrimp is my go to but had extra chicken defrosted so threw that in–its really a throw together dish that’s amazing.
SO EASY!
Start by cooking the chicken in a little olive oil to about half way done. Depending on the size of your pieces this should take around 5 minuets. Then add all your veggies besides the tomatoes and cook till tender. I always check a larger piece of chicken to be safe, and try to poke a carrot with a fork. If it goes in easy the carrots are ready! There usually the hardest veggie in the mix and a sign that everything is done. Now add the whole bottle of sauce, tomatoes, and mix it up! Let this sauté for around 5 minuets to meld the flavors, and you can cook your rice within that time 🙂 Put some rice in a bowl, top with the curry, and dinner is served!
Easy Thai red curry
Equipment
- 1 Knife
- 1 Large Pot
Ingredients
- 8 Mushrooms
- 8 Baby carrots
- 3 Celery stalks
- 1/2 Onion
- Container Mini tomato's
- 1.5 Pounds Chicken, diced
- 1 Bottle Trader Joe's Thai red curry
- 2 Packs Trader Joe's frozen Jasmine rice
Instructions
- Dice your mushroom's, celery, baby carrots, onions, and chicken.
- Add the chicken into a pot with a little olive oil/salt/pepper. Sauté until cooked about half way through.
- Add your diced vegetables to the pot and sauté for around 10 minuets. The chicken should be cooked, carrots tender to a fork, and mushrooms shrunken.
- Pour the bottle of Thai red curry on top, and add your mini tomatoes. Mix and let simmer for 5 minuets to combined the flavors.
- While that's happening cook your rice! Just three minuets in the microwave and it's nice and fluffy.
- Put rice in a bowl, and top with your curry! Dinner is served 🙂
