Unexpected Cheddar Bay Biscuits!

Oh my god! A match made in heaven! This is a copy-cat Red Lobster recipe I’ve been making for over a decade, with a Trader Joe’s twist. Instead of the usual cheddar were using the amazing unexpected cheddar. And the flavor! These are SO GOOD! That little bit of parm taste from the unexpected is, unexpected in a great way! My son and husband don’t love parsley but feel free to add it to all of yours, I limited it to just mine.

Ingredients

These are so easy to make as well! All you need is a complete pancake mix, a stick of butter, a block of unexpected cheddar, milk, and garlic powder. That’s it! well, a pinch of salt for the topping as well but that’s a gimme. Make sure your pancake mix is complete, this wont work if its not. Using the pancake mix and softened butter really gives these biscuits a light and airy taste to them……even though there full of cheesy goodness! Preheat your oven to 400 degrees and the first thing your going to do is grate your cheese. I do almost the entire block, leaving a little for snacking 🙂 Unexpected cheddar is……unexpectedly hard to grate! Not too hard but harder then a usual chunk of cheese. After that your going to add your pancake mix to a separate bowl, and the soft butter. Make sure that butters soft but not melted! This is the key part to the biscuits, once done its easy as 1-2-3.

Left is that amazing shredded cheese, and right is how the batter should look with just pancake mix and butter. A trick I use is once the butter is coated in mix, use your hands. You can rip it into small pieces with ease! A fork is the proper option but it keeps getting stuck and takes awhile to get small enough. Wash those hands, dry them, and dig in! You want there to be little butter balls all throughout the mix. These will help keep them light and fluffy, not weighing them down like melted butter can. The hardest part is behind you–now to finish them off!

Now your going to add that cheese, the milk, garlic powder, and mix! Just by hand, you don’t want to over mix this batter. Its should just come together. It should look a little crumbly but be soft and shapeable to the touch. Once ready shape them into the size biscuits you want, I usually go for around 1/4th a cup worth for each biscuit. I got about 10 from this recipe, all a good size and probably enough to have with two meals. Perfect for dinner one night and left overs the next!

Straight from the oven biscuits! Time to let those cool while you make that delicious butter sauce to brush on. Take the other half of your soft butter in a bowl and melt it in the microwave. Once melted add the garlic powder, salt, and if you like it parsley and mix it together. once the biscuits are cool to the touch take brush that goodness all over them all. It will warm them up again and give them a glowing color that looks amazing! I had a little extra so I went back over some of them–cant have too much butter 🙂 Ready to serve right away or can save them for up to 3 days in an airtight container. Real question is will they last that long!

Red Lobster copy cat biscuits with a Trader Joe's twist! Taking these irresistible biscuits and adding the amazing unexpected cheddar from TD's to make them even better! These biscuits are airy, buttery, cheesy goodness you'll want to make over and over again. And so simple that you won't mind!

Ingredients
  

Unexpected Cheddar Bay Biscuits

  • 2 1/2 Cups Complete pancake mix
  • 1/2 Stick Butter Lightly softened
  • 1 1/2 Cup Unexpected Cheddar Cheese Shredded
  • 3/4 Cup Milk
  • 1/4 Tsp Garlic Powder

Brush on Butter Topping

  • 3 Tbsp Melted butter
  • 1 Tbsp Garlic powder
  • 1/2 Tbsp Salt
  • 1/2 Tbsp Parsley flakes

Instructions
 

  • Pre heat your oven to 400 degrees, and take you butter out to soften. Give it 10-20 minuets so its soft to the touch but still has form
  • Combined pancake mix with butter using a large fork. You want to mix it so there are small chunks of butter all throughout the batter
  • Add unexpected cheddar, milk, garlic powder, and mix by hand till combined. Don't over mix, it should look like a rough batter
  • Make 1/4th a cup size portion of the dough (or whatever size you prefer, cook longer for larger and shorter for smaller) and place them on a greased baking pan. Put in your pre-heated oven and bake for 15-20 minuets, they should be golden with a tint of light brown when ready
  • Take the biscuits out and while they cool melt the 3 tablespoons of butter in the microwave. Mix in the salt/garlic/parsley and brush it over all the biscuits. Use it all and if you want to make a little more, have fun!
  • Eat and enjoy! Best while warm but you can reheat and there still amazing
