Instant amazing pasta!
Looking for a easy amazing diner? Look no further! This cheesy pasta has only 6 ingredients and is cooked in the instant pot—-pasta cooked in the instant pot! It blew my mind at first but really does come out great. This meal takes maybe 30 minuets with most of the time being letting the instant pot do its thing.

Did I mention 6 ingredients! I got all of mine from Trader Joe’s, but the only show stopper from there is the balsamic glaze. You can use regular balsamic but this glaze gives it a richer flavor. I also love Trader Joe’s ricotta cheese, it has a great flavor and is better then most brands in my opinion. The frozen crushed garlic is a go to time savor, let it sit out as you prep and it will mix right in! Doesn’t take long to defrost. Feel free to use any type of pasta you prefer, a penne or ziti tends to work best though. Diced tomatoes and some frozen peas finish this list off! You can use a different frozen veggie or omit the peas if you want, they do add a great pop in both color and flavor.
First step is so easy! Just add the diced tomatoes (liquid and all), water, pasta, and peas to your instant pot. Give it a good mix to get everything combined and your ready to cook. That simple! Put the lid on, use high pressure cook for 5 minuets, and then fast release. It actually cooks the pasta perfectly and in a fresh tomato type sauce. Next you drain the liquid out leaving just the pasta, peas, and tomato chunks–but everything will have a light tomato flavor from cooking in it.
Strained pasta on the left, you can see the light sauce and all those good flavors mixed together. Could eat it like this but that’s a little plain. On the right is the cheesy mix! Add the ricotta, balsamic, salt, garlic, and some basil to a large bowl and mix it. Once mixed poor your pasta into the bowl and mix it all together. The result is a cheesy tomato pasta dish that took maybe 10 minuets of effort for you. The recipe uses the whole bag of pasta and can easily feed 6, this meal preps a huge fun dish in little to no time.

Ingredients
- 1 Box Pasta Ziti or Penne preferred
- 28 Ounces Diced tomatoes
- 2 1/2 Cups Water
- 15 Ounces Ricotta Cheese
- 2 Tbsp Balsamic vinager
- 1 Clove Garlic
- 1/4 Cup Olive oil
- 1/4 Cup Basil
- 1/3 Bag Frozen peas
Instructions
- Add diced tomatoes, water, peas, sprinkle of salt, and pasta to your instant pot. Stir well to mix it up
- Close the lid and seal the pressure release valve. Pressure cook at high for 5 minuets, then use quick release
- Combined ricotta, basil, balsamic, garlic, oil, and salt in a large bowl
- Strain the pasta when done and then mix into the bowl with the ricotta mixture. Stir well and you have your easy amazing dish! Enjoy!
