Baked Potatoes, But Twice as Nice
Happy almost St Patty’s day all! Its the time of year to breakout a corned beef, but if your looking for something different to pair it with your in luck! Can always boil with veggies and potatoes but I love a crisp. These twice baked give that and then some! Using Trader Joe’s Irish porter cheddar gives it a beautiful color and flavor! Plus using both the microwave and oven to save time but still have them crispy and delicious.
Not many ingredients in this even! I missed the milk in the picture so make sure you have that! But grab some russet potatoes, Greek yogurt, butter, scallion, and that amazing Irish porter. If you haven’t tried it the cheese yet it’s like a cheddar, but with a little extra punch. Plus the crazy coloring makes it really fun, my son was iffy but once we tried it loved it and found it funny. Simply super tasty potatoes ho!
Preheat your oven to 400 degrees, you’ll need it twice. To prep the potatoes you run them under water, scrub away, and poke some holes in them with a fork. Put them on a microwave safe dish and heat on high for 10 minuets. Move them to a baking tray, drizzle olive oil, and roll them around. Place in the oven for 10 more minuets to help get that crispy skin. Shred the cheese while these cool slightly, cut them in half, and remove the middle parts. Leaving around 1/4th around all edges but the rest into a bowl—and the fun starts!
Add the ingredients! Order doesn’t matter but I went scallion, butter, Greek yogurt, milk, and half the cheese. Add some salt and get that masher out! There’s something therapeutic about mashing potatoes up, and see everything mix in together is just <3 Once mashed add in the other half of the cheese and stir it all up, you should have a smooth mixture. Feel free to try a little and add a little more of anything you like, salt and cheese level vary by person and this is for you.
Almost there! Take that amazing mixture and gentle fill each boat, being sure not to break the edges. A little tricky depending on how your potatoes sliced, but using both the microwave and then the oven should have the skin pretty hard and that 1/4 inch barrier will do its job. Fill the boats up and then add a little more on top, can get fancy and make a design or just let them look thrown together–messy kinda fits the theme 🙂 If you want sprinkle a little more cheese on top of each potatoes and bake in the oven for 15-20 minuets. Let cool and enjoy!
Twice Baked Potatoes
Ingredients
- 3 Large Russet potatoes
- 1/2 Cup Plain Greek Yogurt
- 2 Tbsp Butter
- 1/2 Cup Milk
- 1 Scallion Chopped
- 1 Cup Irish Porter Cheddar Cheese Shredded
- 1 Drizzle Olive oil
Instructions
- Preheat the oven to 400 degrees
- Under running water scrub the potatoes and poke holes with a fork
- Place on a microwave safe dish and cook for 10 minuets on high
- Move to a baking pan, coat with olive oil, and bake for 10 minuets
- Shred the cheese while the potatoes cool slightly
- Cut each potatoes in half, scoop out the insides into a bowl leaving 1/4th an inch around the entire edge
- Add in the scallions, butter, Greek yogurt, milk, and half the cheese
- Mash away!
- Mix in the other half of the cheese and stir all around
- Gentle spoon the mash back into the potatoes boats, filling them a little over
- Bake again for 15-20 minuets
- Enjoy your amazing food!
