Double Sprinkle Celebration Cake!
Chromatic celebration cake from Trader Joe’s, a complete cake in a box! Love when cake mix comes with matching icing you can use, and this one being sprinkles all around made it an instant buy. Little guy is obsessed with sprinkles and with Spring just starting its a perfect fun way to usher it in. Were all just getting over yet another cold form this winter and cannot wait to celebrate the change of season!
How to use it
So many ways on the box even! You can make the traditional double cake, enough in this box for two round cakes you can ice together. You could also make cake pops which are always fun, or cupcakes like we did 🙂 You only need limited ingredients, similar to any quick box bake from the grocery store. The icing also needs 1.5 sticks of butter which is more then expected–but worth it. It says 15 cupcakes but we made 12 perfect sized ones, 15 might be making them a little small. Would love to hear about the other cooking ways if you guys try them!
Lets get baking!
To start I broke and whisked two eggs in the bowl, while little guy is a master baker he doesn’t get to touch raw egg directly yet. Then he happily whisked in the milk and oil till smooth and then some. Next you add in the cake mix which is quite a lot! Took some real muscle (and mommy mixing some) to get that going 🙂 This mix was definitely thicker then most once the cake got added, took it as a sign that it would be extra tasty and was not let down. Once you tame that beast and get a smooth batter your ready to pour! The sprinkles are already in the mix and once smooth can see them clearly, hard to keep the little from eating them but the promise of cupcakes gave him strength.
Fill em up!
The messy fun part! Put your cupcake liners in and get ready to fill! The little used a spoon to slowly add to each and did a great job. 2-3 spoonful’s each and while there was drizzle around it stayed pretty clean! I topped them each with whatever was left after and popped them in the oven. Baked at 350 for 20 minuets exactly and they came out perfect. Lightly toasted around the top but soft and fluffy inside. The look so cute and just needed a little bit of toppings added 🙂
Ice ice baby
Time to make that icing! Not going to lie, I usually buy premade icing. This was an adventure for both of us! You start by putting the room temperature butter into your stand mixer and mix till smooth. Definitely recommend a stand mixer for this, it takes a lot of mixing to get this smooth and fluffy. Once done you add the mix and sprinkles! The mix is pretty much powdered sugar so mess incoming! Just bag to bowl made a big splash, but adds to the fun 🙂 From that point you can hand mix till smooth and then your ready to top! Its a pretty thick icing and takes a little effort to spread. Little guy likes squishing it on top lol but I tried to smooth them over with a spoon after.
Verdict?
Amazing and so much fun! The cupcakes are light and fluffy with great flavor, and the icing is rich with pops of sprinkles. They look so cute and I added some candy coated dark chocolate covered almonds from TD as well (SO GOOD). The little guy had a blast and making both the cupcakes and frosting made this almost an hour long activity. Perfect for a rainy day or semi sick day like we were having<3 Enjoyed this kit and might make it again around Easter.
