Roast the Rainbow, Veggie Style

Spring is here! Time to add color everywhere you can, and these rainbow veggies from Trader Joe’s are perfection. Affordable, pretty, and makes you want to eat them<3 Always looking for ways to get the little to enjoy veggies, and color tends to help. Even make it a game sometimes where mommy eats all the purple and he eats all the yellow. These taste great, and add that fun to help motivate kids (and adults like me) to eat those veggies.

What to use?

These cuties! I roasted carrots, cauliflower, and some teeny tiny tomatoes–my favorite ever. All of this was under $10 and makes enough for 4 people easy, I only did half since it was just me and my son this week. The cauliflower comes washed and cut which makes this so easy. Both are perfect for munching on raw if you like, I love a little ranch dressing/raw veggie snack. And the colors just make them so much better, like a sunny day compared to cloudy. Everything just feels right 🙂

Prep, or in this case ready to go!

Did I mention easy! The cauliflower is ready to go, cut perfectly, washed, just pour in a bowl! I washed the carrots and tomatoes so they went in a bowl together, and sprinkled both with some olive oil/salt/pepper. Nothing crazy and just wanted them all to have a little flavor on them to start. Preheat your oven to 375 and line your pan with parchment if you like. I never used it growing up but now am in love–keeps things cleaner and also seems to cook things better. Could just be me being over excited lol but it seems to make a difference! With that set your ready to go.

Roast baby roast!

Place them on the pan and get them ready to go! I did the cauliflower first, you don’t want to crowd them as they can get soggy. Keep the cauliflower separated as a little tricky to get that nice roasted look and taste. Then added the carrots and tomatoes, topped with some more seasoning, and they are ready to bake! They took around 30 minuets and came out perfect. The tomatoes explode with flavor and add a natural juice to the dish. It looks so pretty and is a perfect spring side dish to put out with dinner.
