Fast and Easy 4 Ingredient Mediterranean Meal

Amazing dish with summer vibes, this orzo meal is a winner! Only four ingredients, barley any cooking, and so fast you wont believe you made this. I found this online and though to give it a try–so glad I did! Going into the meal rotation and will be a favorite of summer. Its so light, colorful, and good hot or cold. Perfect family meal or to bring to a BBQ as a side dish.

Only four ingredients!

That.is.it! Crazy how good this tastes for being so simple! The feta, pepper drop, and olive antipasto takes on the workload. It adds so much flavor and is ready to open, pour, and go! First time trying it from Trader Joes and a huge fan, for this dish, others, and just to snack on. The fire roasted tomatoes add great color and love that you can see the char. You really get that roasted flavor. Shrimp you just defrost and there ready to eat, though I do like to cook them a little more like in this recipe. Big fan or orzo as its different from most pasta and fun. Love everything in this dish an dhow it comes together.

Mix it up!

Not only a few ingredients, but also so simple to prepare! Just cook the orzo as directed on your package, cool it off, and your ready to build the dish. Add them to your baking pan and then add the other three ingredients on top. If you want to make the whole bag of orzo id recommend doubling everything else, to really keep the flavor high. We got about 6 servings from half a bag and one of everything else 🙂 Once everything is in the pan mix mix mix! It’ll look so pretty, and all that’s left is to bake for around 10 minuets. Melds the flavors together and comes out amazing!

Perfection

I’m in love with this dish. The flavors blend so well, the oil from the antipasto mix adds so much, and those tomatoes<3 I didn’t even add extra salt/seasoning, it is literally just those four ingredients combined and baked together. You can adjust according to your taste, but its pretty perfect just from the basics. Love the pop of olives in it, and everything is proportioned great, nothing over powers. You can a shrimp in almost every bite, medium size really works for this Its balanced, flavorful, and screams summer to me. Enjoy!

Ingredients
  

  • 1/2 Bag Orzo
  • 1 Package Feta, pepper drop, olive antipasto mix from TD
  • 1 Can Fire roasted tomatoes
  • 8 Ounces Cooked medium shrimp

Instructions
 

  • Preheat your oven to 425 degrees
  • Cook the orzo as instructed on the bag. For Trader Joes bring a pot of water to boil, add orzo and cook for around 5 minuets, strain and rinse with cold water
  • Add the orzo, antipasto mix, fire roasted tomatoes, and shrimp to the baking pan. Mix well
  • Bake for around 10 minuets and your all set!
