I view it as American chicken katsu, and its beyond delicious! Been having cornflake chicken since I was little and now making it with Trader Joe ingredients, cooking in the air fryer, and adding some katsu spin makes it even better. Pretty easy to make and a fun change to the usual chicken dishes. You get the fun of breakfast with protein that pairs perfect with so many side dishes, hope you try and love this one as much as I do.

Simple to make, delicious to eat

Only 4 ingredients too! Chicken as the base, crumbled cornflakes for the crust, melted butter mixed with them to give that extra oomph of flavor, and eggs to hold it all together. An important prep part I hate though is the pounding of the chicken. Pop those breasts in a bag and hammer them as flat as you like, it helps the crunch and keeps things even. Hate this step but so important! I also cut the breasts in half to make portion size pieces. Then just crumble the cereal, melt some butter, and mix it in a wide bowl. Break and beat your eggs in another and your ready to go!

When I dip you dip we dip 🙂 Salt and pepper your pieces, take the first one, and dip it real good in your egg. Make sure its coated and transfer to the cornflakes–can hardly tell but there’s a chicken buried in that picture. I keep one hand for eggs (left) and one for flakes so keep the process moving. Press the chicken down, flip it, add more flakes on top, and press again. You want it as covered as can be. Feel free to make a new bowl of flakes and butter if you need more—get these birdies nice and crunchy.

A thing of beauty

Have your air fryer preheated to 400 degrees, put your pieces in and cook for around 20 minuets. I checked and they were ready around 18, know my air fryer cooks a little quick. can eat this with pasta, on a salad, anyway you like! My favorite is with a bowl of rice and some ton katsu sauce drizzled on top. Just goes so well together and such a fun mini fusion. If that’s not for you can dip in ketchup! Air fried cornflake chicken

A childhood favorite, crumbled cornflakes make an amazing air fried chicken. I choose to pair it with some white rice and katsu sauce to make it like a fusion dish, but can be eaten any which way you like!

Equipment

  • 1 Air Fryer
  • 2 Wide bowls

Ingredients
  

  • 1.5 Pounds Chicken Breasts
  • 2 Eggs
  • 3 Cups Crumbled Cornflakes
  • 1/2 Cup Melted Butter

Instructions
 

  • Pre-heat your air fryer to 400 degrees
  • Place your chicken breasts in a zip lock bag and pound them to around 1/2 an inch thickness. Cut each in half to portion them
  • Break two eggs in a wide bowl and scramble. Then crumble your cornflakes into the second bowl, pour the melted butter over, and mix
  • Take each piece of chicken one at a time and place in the eggs. Coat it extremely well and transfer to the cornflake mixture
  • Pat the chicken into the cornflakes, flip, press more flakes on top and pat again. You want the piece completely covered
  • Place in your air fryer and cook for around 20 minuets (start checking around 16 in case your fryer runs hot
  • Serve with your favorite side/sauce and enjoy!
