Easiest Couscous Salad You’ll Ever Make
Currently obsessed with the feta, pepper drop, olive antipasto mix from Trader Joe’s. Like it makes any dish a full on meal! Has those Greek flavors that fit summer so well and just goes with everything. Came up with this dish on a whim and its beyond amazing, and easy. Packed with flavor and looks so pretty, but you barley do anything besides cook the couscous. If your looking for a stunning side, or want to add protein and have a quick amazing meal–this is it!

SO EASY! Its these three ingredients, so simple and under $10 for the entire dish. Love the pearl couscous for its size, I like a bite on my couscous and not those itty bitty balls. Trader Joe’s arugula is a little over $2 for a huge bag, I buy it almost weekly to make sure I’m getting some greens in. Easy to have a salad or add to recipes like this 🙂 Just talked about my love for the antipasto so wont gush too much—but its amazing. A little hard to locate but its hiding in the cheese area, find it and change your life.
Cook that couscous!
This is basically all you have to do lol. Follow the instructions on the box and boom! The cooking is done. Don’t skip the browning part, it adds nice color and texture to the dish. Add the couscous to the pot along with a dash of olive oil and just let it cook for 3-5 minuets, stirring here and there. Once you have color on some of them add in your water, should already be boiling so cover and lower to a simmer for 10-12 minuets. Once the water is absorbed place it in a strainer and run it under cold water. Chill it off good, shake it off, and add to the bowl.

Now the fun part! Open and add that amazing antipasto mix, those little pepper drops and so pretty and pack just enough heat to add pow tot he dish. Then add arugula, I use a large handful at first and then add more if needed–once you mix it up you can see if its evenly distributed. That is all there is! Can top with protein for a full meal, I added some grilled shrimp last night and it was perfection. Greek Couscous Salad
Equipment
- 1 Pot
- 1 Bowl
Ingredients
- 1 and 1/3rd Cup Pearl Couscous
- 1 Pack Feta, Pepper Drop and Olive Antipasto
- 1 Large Handful Arugula
Instructions
- Add the couscous to a pot with a dash of olive oil, brown for 3-5 minuets
- Add 1 and 1/3rd cup of water to the pot, bring to a boil, lower to a simmer and let cook for 10-12 minuets (till water is absorbed)
- Cool the couscous under cold water and strain to dry
- Add to a bowl and pour the entire antipasto over it along with the arugula, add more or less if youd like 🙂
- Mix and refrigerate! Ready to go at anytime
