Easy Chocolate Cherry Cheesecake Cupcakes

Easy amazing chocolate crusted cherry cheesecake cupcakes! Perfect for Easter or any other holidays, these are a hit to make and to eat. I used Trader Joe’s cats cookies to add to the fun, and they worked so well as the crust. Not many ingredients at all and is something you can make with the littles, many fun parts for them. Best to double the recipe–these will be a hit 🙂

Ingredients

How do I always forget one when taking a pic! The eggs are missing, but you do need them as well! Two to be precise 🙂 Like I said above, used the chocolatey cats cookies for people for this and they are a perfect fit! Feel free to use any simple chocolate cookie, or can go vanilla if you prefer. You can also use sour cream instead of Greek yogurt, but I love the texture and added protein from the yogurt<3 Pie filling can be your favorite type as well! Or can top with whipped cream and decorate–100% up to what you want to make.

Making the crust

Probably his favorite part besides eating! Put your cookies in a plastic bag and get to smashing. I had him use his hands and mash them up hulk style, then I went over it with a meat tenderizer to make sure they were broken up enough 🙂 You want some to be powder like and some to be cookie crumbles, a good mix. Then add them to a bowl and pour your melted butter on top. Mix mix mix and sneak a taste like he did if you want 🙂 Crust is ready to go! Spoon it into your cupcake liners, press down, and bake for around 10 minuets.

Batter, bake, and top!

Next you’ll add all the batter ingredients into your stand mixer bowl, and let it run for 2-3 minuets. The texture should be a thick smooth liquid, I did this part since there were eggs and it was pretty straight forward. You then want to pour the batter on top of your crusts, filling the liners almost to the top. Cheesecake always sinks for me a little so fill em up if your the same! Bake for 20-25 minuets, let sit for around 20 minuets, and then you can top! Ideal world you’d place them in the fridge for an hour first, but can rush it if needed. Spoon your toping onto each and again can steal a little if you want 🙂 They come out looking so cute!

Finished product!

These are so good! The look adorable and are individual size amazing cheese cakes! The crust was perfect, in the picture it looks like its all over the place but once you bite in can see it lining the bottom. It holds together great and is a perfect dessert! You wont feel guilty due to the size……but may eat a few of them 🙂 Great for holidays and parties, everyone loves them and easy to share! Also a great activity for you and your little baker, really kicking up their culinary skills<3

Easy Chocolate Crusted Cherry Cheesecake Cupcakes

Fast and easy cheesecake cupcakes everyone will love! Used the Trader Joe's cat cookies to make it even more fun for toddlers, and came out even better then expected!

Equipment

  • 1 Stand Mixer
  • 1 Bowl
  • 1 Plastic bag

Ingredients
  

  • 16 Oz Cream Cheese
  • 1 Cup Sugar
  • 2 Eggs
  • 2 Tsp Vanilla
  • 1 Tsp Lemon Juice
  • 1/2 Cup Plain Greek Yogurt

Crust

  • 1/2 Cup Melted Butter
  • 1 1/2 Cups Chocolate Cookies ** I used TDs cat cookies, any simple chocolate cookie works

Topping

  • 1 Can Cherry pie filling

Instructions
 

Crust

  • Preheat oven to 350 degrees, line a cupcake tray with cute liners (12 cupcakes)
  • Place the chocolate cookies in a plastic bag, seal it, and crumble away! Can use a tool if youd like or just smash with your hands. You cant crumbles with a few chunks. Poor this mixture into a bowl, add the melted butter, and stir.
  • Spoon enough of the mix to fill the cupcake liners around 1/5th the way up, pack it down. Place the cupcakes in the oven and cook for 10 minuets, this will set the crusts. Remove and place on the side when done.

Batter

  • Place the cream cheese, eggs, sugar, Greek yogurt, lemon juice, and vanilla into your stand mixers bowl and beat together for 2-3 minuets. It should create a smooth thick liquid.
  • Pour the batter onto of the crusts till they are almost full. Bake in the oven for 20 minuet, 25 if you like the tops to be well set with a dark hint.

Topping

  • Remove from the oven and let sit in the tray for 15-20 minuets. Then remove, place on a plate, open your pie filling, and top each cupcake
