Greek style nachos, a refreshing twist
Greek nachos! Been on a Mediterranean kick and it finally met my love of nachos. When I was pregnant nachos were the go to almost nightly, and still love them as a treat. Sometimes they feel a little heavy, and that’s where this style steps in! These actually taste refreshing, have the veggies and light taste from the tzatziki sauce but still cheesy thanks to the feta. Making the chips is so easy and gives them a fresh taste too!
Prep time!
My pitas always go bad! Just cant eat them fast enough, so this was a perfect way to use them up before that happens. Trader Joes has amazing Greek options and grabbed it all there. Their tzatziki sauce is actually good and such a time saver from making it. Olives are a great price, already sliced and like $2.50 for the jar. Love their mini cucumbers and it makes slicing them for this dish even easier. feta, red onion, and tomatoes finish off the group for a perfect pile of nachos!
Making your own chips 🙂
Is so easy and they come out great! Going to make them more often! Just lay your pita bread out stacked one on the other, and slice thru them all. Triangles are the ideal shape but don’t stress perfection, they’ll still taste great. Once cut lay them in a single layer in your air fryers basket, spray with olive oil, and sprinkle some salt. You could also get crazy with flavors and mix whatever you like with some olive oil and brush it on, I kept it simple. Pre-heat your air fryer to 350 and then cook for 3-5 minuets. Amazing chips! That simple!
Top it off
That’s all the cooking needed! Now the fun part of toppings 🙂 I sliced them all up while the chips cooked, doesn’t take long. For layering I like dry/wet/dry, it keeps the toppings on the chips and looks pretty. Onions and cucumbers go first, then tzatziki and feta, then tomatoes and olives. I also topped mine with some thin sliced grilled chicken this time and it was perfection! The cheese and tzatziki give them the gooey flavor you love about nachos, and the rest are refreshing and yummy. Great combo and hope you enjoy the twist on this dish!
