It’s beginning to look a lot like pumpkin
Love summer, but one September 1st hits I consider it fall! The Trader Joe’s fall goodies started hitting shelves mid August, but had to wait till the month changed. First one up is the pumpkin cream cheese! Sounds weird but is actually amazing, it’s not too sweet and taste like pumpkin pie. Decided to use it for some cream cheese cookies and let the little have some cooking fun. Love a soft cookie!
Get that batter going!
Hes excited for pumpkins! First we added the cream cheese and butter to the bowl (always room temp–helps so much and not to be missed!). Had to run it on the stand mixer to cream them together, most recipes have you add the rest little by little while mixing but let him handle it. We added all the rest together and he got to hand mix some, they still came out great so I think its up to you! He’s even breaking eggs now–little isn’t so little anymore! And has some baking practice 🙂 Had to run it back to the mixer to finish it off, but he did a great job too<3
Baking after chillin
Once everything is mixed and smooth, put the batter in the fridge for an hour. The cream cheese keeps it really soft so chilling to dough makes scooping cookies so much easier. Once time is up pre-heat your oven, and its cookies time! we scooped them up and got right around two dozen cookies. He then added an m&m to each and then some sprinkles. Sprinkles are actually great with these to add some texture! we only had rainbow but fall themed ones, or little pumpkins would be so cute!
Cookies are cooked!
And so good! They only take around 10 minuets in the oven, and cooling about the same. So soft and the pumpkin cream cheese really evens it out. These are very sweet and pumpkin flavor calms that. It’s like a pumpkin pie! Even consistency wise, it just works so well. The sprinkles were a great add by him, m&m’s more so just cute 🙂 he loved them and they were a huge it at a party! Pumpkin cream cheese cookies
Equipment
- 1 Stand Mixer
- 2 Baking Trays
- 2 Sheets parchment paper
Ingredients
- 1 Stick Butter room temperature
- 1 Cup Powdered sugar
- 1 3/4th Cup Flour
- 1 Teaspoon Baking powder
- 1 Teaspoon Vanilla
- 1 Egg
- 4 Ounces Pumpkin cream cheese
- Sprinkles If you want 🙂
Instructions
- Add butter and cream cheese to your mixing bowl and beat till creamy.
- Add in the flour, sugar, egg, vanilla, and baking powder. Blend together and you should have a soft batter.
- Place the bowl in the fridge for an hour, this will make it easier to scoop–these cookies are soft! Preheat your oven to 375 when you pull out the batter
- Spoon onto the parchment lined baking trays into equal size cookies. Add sprinkles on top if you want a little extra pop.
- Place in the oven for around 10 minuets. You want to see the edges get golden brown.
- Enjoy!
