Pesto pasta for the win!
Goal this spring has been to try new pasta dishes and this one did not disappoint! Trader Joe’s has so many fun option, and wanted to try a little green this week. I’ve never been a huge pesto girl but here and there love it, most pasta sauces are red based or cream so its a beast of its own. There’s some extra fun things you can add in that work well, and thought why not shake up the usual!
Prep that pasta!
First thing was cooking the rigatoni to all dente level, which was perfect cause my son loves it plain and holding its shape. Put some on the side for his fingers pastas lol and had out base ready to go! Sliced the teeny tiny tomatoes in half, all that’s needed<3 There so cute, colorful, and will add a pop of that plus flavor. Used the frozen spinach which I LOVE from TD. Its cheap and since its precooked you get a full bags worth, fresh is so sad once you cook it down lol. Great but such a lie for how much you get. Sauce is ready to go and so are the ingredients.
Getting steamy!
Started with the spinach and tomatoes, sautéed them in a little oil till tender. Then add the pasta in along with some sauce, I used about half the bottle for this. We has enough for two servings each, so good for 4x adults as a main course! Stirred it up and let everything meld together in the pan till its all mixed together—and your set! So simple to prepare but looks like you spent forever, my favorite kind of meals 🙂
Pasta perfection
Both looks and tastes so good! the spinach blends with the pesto and makes it look so covered in flavor. the tomatoes add yellow and red pops plus that tomato juice to brighten it up. The pesto itself isnt too strong which can happen sometimes, but adds just enough flavor to each bite. For leftovers a added a little grilled chicken and to brighten that up a little lemon juice–and it went so well. Can easily add some protein to this if you want. 7/10, not my favorite pasta but great to shake it up and still tasty!
