Spanish Style Rice With a Pop!
Trader Joe’s Spanish style rice with a pop! Of tomatoes, teeny tiny ones 🙂 The rice is fun on its own and makes a great side dish, but a little extra really pushes it over the top. Love these teeny tomatoes to snack on or sauté and eat on rice, so thought they’d make a perfect addition! The colors go perfect as well together for a beautiful dish.
Ingredients and how to cook
Each pack comes with two bags, and each bag is two servings. There’s a lot of rice in each bag and its definitely enough for two, let alone if you add in some veggies. At 220 calories a serving for flavorful tasty rice that’s not bad at all! The sodium is a little high, but the rice is seasoned and ready to go. No salt/soy sauce/hot sauce required which kinda justifies it. You can prepare it on the stove top, or in the microwave which is how I prepped. Just 4.5 minuets, 1 minuet to cool, and bam! You have a side dish! Now to add a pop….
Pop! Goes the tomatoes
The rice looks tasty and ready right from the bag! Its seasoned, fluffy, and taste better then most quick stove top brands of Spanish rice. While that cooled I heated a pan with a little oil and poured the tomatoes in. A little salt and pepper, a little sauté, and these are ready in no time! Around 4-5 minuets to be exact 🙂 The color in these adds to the dish and there small enough to just add a little extra flavor. Plus being just tomatoes there low in calories and everything else. Truly a pop of flavor 🙂

Just like that! Almost no effort and you have two servings, probably more as a side, that are pretty and ready to go. The tomatoes pair with the flavor and the color pairs too. Yellow, red, and orange gives a pop but still blends with this dish. Enjoy with your favorite protein or as a bowl 🙂
