Stretch that salad kit!
Who doesn’t love a salad kit! Trader Joe’s has so many amazing options an dis always coming out with new ones. The only thing, some of them can be a little calorie heavy for a salad. Like anything over 500 calories before adding proteins loses my interest–I’m having salad to be light. To still enjoy the flavor but save some calories I love to add in some arugula, stretching that salad out. You get multiple salads, save money, and save calories–perfect hack!
My save for later stash 🙂 I keep the dressing in a little tupperware or use a different one for later salads and use about 1/3rd of all the other toppings. You can easily get 3 full salads from the kit and a bag of arugula, just the dressing might be tight. I always add a protein since it helps me fill up in a healthy way, and usually add a few more veggies to the mix. Peppers, tomatoes, cucumbers–I try to stay away from olives/croutons/heavier toppings since the kit usually has those covered.
Left side is kit and arugula only, right is with some protein and added veggies! Both are amazing ways to have the salad, one makes it feel more like a meal. If you do it this way you can get a kit of your choice, bag of arugula, dressing, pepper, cucumber, and a pre cooked chicken breast from TD for under $20. That’s three healthy lunches for under 20, save that money and cut those calories! Even just doing that once a week makes such a difference, for the new year have been trying to do this each week and try a different kit. Little hacks to help meet goals 🙂
